I have been searching for a go-to white cake recipe (from scratch, for funsies), and I've finally found one! After trying several that were too dry/crumbly/hard (and often too small-batch), this one turned out perfect. This is the sprinkle-filled version, but I imagine it will be just as excellent without.

I used it for mini cupcakes for my (adorable!!) neighborhood block party:

I found the cake recipe on Sprinkles bakes. I kept all of the ingredients but changed the technique a bit and used 7-minute icing from the Joy of Cooking. I am in love with this icing. Occasionally I'll be swept off my feet by something else (lately: Swiss Meringue Buttercream), but then I go back to this lovely, fluffy, marshmallowy 7-minute piece of heaven and my devotion is restored.
